Pracovní postup: Pražma na pánvi s bramborami vařenými ve slané vodě Pražma bývá označována jako Sea Bream nebo doráda. Připravuje se na mnoho způsobů, grilování je nejběžnější, ale ne vždy je na lodi k dispozici gril. Připravit pražmu v troubě je snadné a u katamaranů nebývá pečení ani v letních měsících problém díky dobře větratelnému salonu. Ale pečení jsme se už věnovali v minulých dílech a pak ne všechny posádky plachetnic chtějí vytápět vyhřátý interiér pečením v troubě. Proto jsme zvolili úpravu na pánvi, která je vždy dostupná a příprava ryb je rychlá a jednoduchá.Pražmy omyjeme a vykucháme. Cibuli oloupeme a nakrájíme na klínky. 3 stroužky česneku oloupeme, rozdrtíme plochou hranou nože a nakrájíme, zbylé 3 necháme v celku neoloupané. Jeden citron rozkrájímena měsíčky. Břišní dutinu každé pražmy osolíme a vložíme do ní celý stonek bazalky i s listy, část nakrájeného česneku, cibule, citronu a na závěr přidáme sušenérajče. Na pražmy nameleme chilli a máme je připravené na smažení.Brambory omyjeme a dáme je vařit do slané vody, klidně mořské, pokud můžeme nabrat čistou. Do pánve nalijeme olivový olej, aby bylo dno pokryto tenkou vrstvou, a rozehřejeme. Když je pánev rozpálená vložíme do ní pražmy, neoloupané stroužky česneku a zbytek cibule. Smažíme 5 minut a poté pražmy otočíme a smažíme 5 minut i na druhé straně. Podlijeme vínem, přidáme keříková i sušená rajčata a poté na mírném ohni vaříme, dokud nejsou pražmy hotové. Trvá to zhruba 20 minut, ale poznáme to také podle zbělení očí. Mezitím kontrolujeme brambory, a když jsou hotové, tak je slijeme. Před servírováním vyndáme z břišní dutiny ryb bazalku a vyměníme ji za čerstvou a bazalkou posypemei rajčata.
