Preparing the dough for linzer candy is not complicated. For a perfect result, it is important to always follow the basic linzer rule: 1:2:3 ratio of ingredients! So make it with, for example, 70 g of icing sugar, 140 g of butter and 210 g of plain flour. To this, add 2 egg yolks and the grated zest of half a lemon or a little lemon juice. Stir in 1 more vanilla sugar or a few drops of vanilla essence. To the sifted flour and icing sugar, add the chopped loose butter, egg yolks and zest and work into a smooth dough as quickly as possible. You can knead the dough in a food processor or by hand on a rolling pin. Dont overknead, it will make the cookies less crunchy. Wrap the finished dough in cling film and leave to rest in the fridge, ideally knead for one day and then bake the next day.2. Divide the rolled out dough in half. Roll out each half on a floured rolling pin into a 3mm-thick sheet. Cut out full shapes (stars, flowers, circles, hearts) from one of the sheets with a pastry cutter, and poke holes in the middle of the other sheet with a smaller pastry cutter. Bake on a baking sheet lined with baking paper for 10-12 minutes in an oven preheated to 170 °C. The candy is done when it is baked slightly pink. 3. Glue the cooled sweets with a strong, grain-free jam, a favourite is spicy currant jam. You can also glue full shapes and brush the top with icing sugar and sprinkle with coloured decorations, or stick almond flakes with a raisin in the middle in the shape of flowers.
